More than 100 years ago, Rosalía Suárez popularized the paila ice cream, made in a bronze paila on straw, ice and salt: the purity and quality of the fruit, plus a constant whipping to the surprise of the tourist.
In the past, the straw came from the páramo, the ice was brought from the Imbabura volcano, and the fruit was obtained in various markets in the city. The paila ice cream are unique in its kind and has become the icon of the Ibarreños. The ice cream is served in glass cups or cones.
