A tradition of more than 100 years in Ibarra, which during this time has managed to be known, thanks to its gastronomic proposal called typical dish.

The dish has Andean ingredients, such as: red meat, kneaded cheese, mote, maqueño pie, handmade chorizo, avocado, pickles and potatoes with mapahuira (pork lard).

Places where the typical dish El Alpargate is sold are: El Alpargate de los Tejares (Santa Rosa de El Tejar) and El Arpargate 2 located on José Domingo Albuja and Río Tahuando streets.
